Why must I be prevented by government bureaucrats from choosing which health insurance provider?

Those companies were not selected by the government. They are the only companies available in NY because no other companies are willing to abide by NY's laws that say that any insurance company that sells health insurance to anyone between 19 and 64 years old must sell to everyone in NY who wants to buy from them, at the same price.
